These Mini Jalapeño Popper Egg Rolls are a delicious and crispy twist on the classic appetizer, combining creamy cheese and spicy jalapeños wrapped in crispy egg rolls.

Ingredients

  • 8 jalapeños, diced
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions, chopped
  • 1 package egg roll wrappers
  • 1 cup oil, for frying

Instructions

  1. In a bowl, mix the diced jalapeños, cream cheese, cheddar cheese, and green onions until well combined.
  2. Place a spoonful of the mixture on each egg roll wrapper and roll tightly, sealing the edges with water.
  3. Heat oil in a pan over medium heat, and fry the egg rolls until golden brown and crispy on all sides.
  4. Remove from oil and drain on paper towels before serving.
