8 jalapeños, diced
1 cup cream cheese, softened
1 cup shredded cheddar cheese
1/2 cup green onions, chopped
1 package egg roll wrappers
1 cup oil, for frying
Instructions
In a bowl, mix the diced jalapeños, cream cheese, cheddar cheese, and green onions until well combined.
Place a spoonful of the mixture on each egg roll wrapper and roll tightly, sealing the edges with water.
Heat oil in a pan over medium heat, and fry the egg rolls until golden brown and crispy on all sides.
Remove from oil and drain on paper towels before serving.
Notes
For extra spice, leave some seeds in the jalapeños.
