A vibrant and healthy Mediterranean pasta salad that combines fresh ingredients and hearty pasta for a perfect dish.

Ingredients

  • 8 ounces pasta of your choice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside to cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  3. Add the cooled pasta to the bowl and mix well.
  4. In a small bowl, whisk together olive oil, red wine vinegar, and oregano. Pour over the pasta salad.
  5. Season with salt and pepper to taste and toss gently to combine.
  6. Refrigerate for at least 30 minutes before serving.
