3 large apples, peeled and sliced
1 cup mascarpone cheese
1/2 cup granulated sugar
1 cup all-purpose flour
1/2 cup rolled oats
1/2 cup unsalted butter, softened
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
1/4 cup brown sugar
Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine the sliced apples with cinnamon and granulated sugar. Set aside.
In another bowl, mix the flour, oats, brown sugar, and salt. Add the softened butter and vanilla extract, and mix until crumbly.
In a greased baking dish, layer half of the crumb mixture, then add the apple mixture, followed by the mascarpone cheese. Top with the remaining crumb mixture.
Bake for 30-35 minutes until the top is golden brown and the apples are tender.
Let cool for a few minutes before serving.
