- 1.5 kg leg of lamb
- 2 tablespoons olive oil
- 3 garlic cloves, crushed
- 1 teaspoon rosemary, chopped
- 1 teaspoon thyme, chopped
- 1 cup red wine
- 2 cups lamb or beef stock
- 1 tablespoon mustard
- Preheat your oven to 180°C (350°F).
- Rub the lamb with olive oil, garlic, rosemary, and thyme.
- Place the lamb in a roasting pan and roast for 1.5 hours.
- Remove the lamb and let it rest for 15 minutes before carving.
