Ingredients

  • 1.5 kg leg of lamb
  • 2 tablespoons olive oil
  • 3 garlic cloves, crushed
  • 1 teaspoon rosemary, chopped
  • 1 teaspoon thyme, chopped
  • 1 cup red wine
  • 2 cups lamb or beef stock
  • 1 tablespoon mustard

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Rub the lamb with olive oil, garlic, rosemary, and thyme.
  3. Place the lamb in a roasting pan and roast for 1.5 hours.
  4. Remove the lamb and let it rest for 15 minutes before carving.
  5. In the meantime, prepare the gravy with red wine and stock in the roasting pan over medium heat.
