1 cup tapioca pearls
2 cups coconut milk
1 cup mango puree
1/2 cup sugar
1/4 teaspoon salt
2 cups diced fresh mango
Instructions
Soak the tapioca pearls in water for 30 minutes, then drain.
In a pot, combine coconut milk, sugar, and salt. Bring to a simmer.
Add soaked tapioca pearls and cook until they become translucent.
Remove from heat and stir in mango puree.
