  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1 tablespoon melted butter
  • 1 cup diced fresh mango
  • 4 slices turkey bacon

Instructions

  1. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Combine the wet ingredients with the dry ingredients until just mixed; fold in the diced mango.
  4. Heat a non-stick skillet over medium heat. Pour 1/4 cup of the batter for each pancake onto the skillet.
  5. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on the other side.
  6. In another pan, cook the turkey bacon until crispy.
  7. Serve the pancakes warm with turkey bacon on the side.
