  • 1 cup Greek yogurt
  • 1/2 cup honey
  • 1 large egg

  • 1 teaspoon baking soda
  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas.
  3. Add the Greek yogurt, honey, egg, and vanilla extract to the mashed bananas and mix until well combined.
  4. In a separate bowl, whisk together the baking soda, flour, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before serving.
