A delicious recipe for loaded baked potatoes topped with turkey bacon.

Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup cooked turkey bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes and poke holes in them with a fork.
  3. Bake the potatoes for 45-60 minutes until fork-tender.
  4. Remove from oven and let cool slightly.
  5. Slice each potato in half lengthwise and scoop out some of the flesh.
  6. In a bowl, mix the scooped potato with cheese, sour cream, turkey bacon, green onions, salt, and pepper.
  7. Fill the potato skins with the mixture and top with extra cheese.
  8. Return to the oven for 10 minutes until cheese is melted.

Notes

  • For extra flavor, you can add garlic powder to the potato filling.
  • Use different toppings like jalapenos or diced tomatoes.
