  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt, and poppy seeds.
  3. In another bowl, whisk the melted butter, eggs, lemon juice, and lemon zest.
  4. Combine the wet and dry ingredients until just mixed.

  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
