Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 1 teaspoon dried thyme
  • 2 lemons, juiced
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken and cook until browned on all sides. Remove chicken and set aside.
  2. Add carrots, celery, and onion to the pot. Sauté until softened.
  3. Add garlic and sauté for another minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add orzo, thyme, and the reserved chicken back into the pot. Cook until orzo is tender.
  6. Stir in lemon juice and spinach. Season with salt and pepper. Serve hot.

Notes

  • For a richer flavor, consider adding a bay leaf while simmering.
