- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 cup orzo pasta
- 1 teaspoon dried thyme
- 2 lemons, juiced
- 2 cups baby spinach
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add chicken and cook until browned on all sides. Remove chicken and set aside.
- Add carrots, celery, and onion to the pot. Sauté until softened.
- Add garlic and sauté for another minute.
- Pour in chicken broth and bring to a boil.
- Add orzo, thyme, and the reserved chicken back into the pot. Cook until orzo is tender.
