  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix lemon cake mix, water, vegetable oil, and eggs until combined.
  3. Fill muffin cups 2/3 full with batter.
  4. Bake for 15-20 minutes or until a toothpick comes out clean.
  5. Let muffins cool.
  6. In a separate bowl, mix powdered sugar, lemon juice, and lemon zest to make the glaze.
  7. Drizzle the glaze over cooled muffins.
