A delicious and creamy dessert that combines tropical flavors of key lime and coconut, perfect for a quick indulgence at home.

  • 1 cup coconut milk
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1/4 cup key lime juice
  • 2 teaspoons gelatin powder
  • 2 tablespoons cold water
  • 1/4 teaspoon salt
  • Key lime zest for garnish

Instructions

  1. In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes.
  2. In a saucepan, combine coconut milk, heavy cream, sugar, and salt. Heat over medium heat until sugar is dissolved.
  3. Remove from heat and add key lime juice and the softened gelatin. Stir until well combined.
  4. Pour the mixture into individual serving cups and refrigerate for at least 4 hours or until set.
  5. Garnish with key lime zest before serving.

Notes

  • For a vegan version, substitute heavy cream with additional coconut milk and use agar-agar instead of gelatin.
