1 cup chopped onion
2 cloves garlic, minced
3 cups chicken broth
2 cups diced tomatoes
1 cup carrots, sliced
1 cup celery, sliced
1 teaspoon dried oregano
1 teaspoon dried basil
1 bay leaf
1 cup small pasta
2 cups cooked chicken, shredded
Instructions
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and garlic, and sauté until the onion is translucent.
Stir in the chicken broth, diced tomatoes, carrots, celery, oregano, basil, and bay leaf.
Bring to a boil, then reduce heat and let simmer for 15 minutes.
Add the pasta and cook according to package instructions.
Finally, stir in the shredded chicken and heat through before serving.
