4 cups chicken broth
1 pound boneless, skinless chicken thighs
1 cup long-grain rice
1 onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 tablespoon olive oil
Instructions
Turn on the Instant Pot and select the sauté function. Add olive oil and sauté the onion until translucent.
Stir in the garlic and cook for another minute.
Add the chicken thighs, rice, chicken broth, salt, pepper, and paprika. Stir to combine.
Seal the Instant Pot lid and cook on high pressure for 10 minutes.
Quick release the pressure, then remove the chicken and shred it.

You can substitute brown rice, but adjust the cooking time to 22 minutes on high pressure.
