Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless chicken thighs
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 cup frozen peas and carrots
  • Salt and pepper to taste

Instructions

  1. Set Instant Pot to sauté mode and add olive oil.
  2. Once hot, add chicken thighs, seasoning with salt, pepper, garlic powder, onion powder, and paprika. Sauté until browned.
  3. Add rice and chicken broth, stirring to combine.
  4. Seal the lid and set to manual high pressure for 10 minutes.
  5. After cooking, let it naturally release pressure for 5 minutes, then quick release.
  6. Stir in the frozen peas and carrots and fluff the rice before serving.
