A delicious side dish of honey balsamic roasted carrots that complements any meal.

Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix honey, balsamic vinegar, olive oil, salt, pepper, and thyme.
  3. Add carrots to the bowl and toss to coat them evenly.
  4. Spread the carrots in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until carrots are tender and caramelized.
  6. Remove from oven and serve warm.

Notes

  • For a spicy kick, add a pinch of red pepper flakes.
  • Can substitute honey with maple syrup for a vegan version.
