High-Protein No-Bake Biscoff Cheesecake Cups

  • 1 cup Biscoff cookies, crushed
  • 2 tablespoons unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/4 cup Biscoff spread
  • 1/2 cup heavy cream, whipped

Instructions

  1. In a bowl, mix crushed Biscoff cookies and melted butter until combined.
  2. Press the mixture into the bottom of serving cups to form the crust.
  3. In a separate bowl, beat together cream cheese, Greek yogurt, powdered sugar, and vanilla until smooth.
  4. Mix in the protein powder and Biscoff spread until fully incorporated.
  5. Gently fold in the whipped cream until combined.
  6. Layer the cheesecake mixture on top of the crust in the cups.
  7. Refrigerate for at least 2 hours until set.
