- 1 whole chicken
- 2 cups mushrooms, sliced
- 4 medium potatoes, cubed
- 1 cup heavy cream
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
- Preheat your oven to 375°F (190°C).
- Season the chicken with salt, pepper, thyme, and rosemary.
- In a large skillet, heat olive oil over medium heat and brown the chicken on all sides.
- Remove chicken and set aside. In the same skillet, add mushrooms and garlic, sauté until mushrooms are tender.
- Add potatoes to the skillet and mix in the heavy cream.
- Place the chicken on top of the potatoes and mushroom mixture.
- Bake in the oven for about 1 hour, or until the chicken is cooked through.
