A comforting and flavorful chicken casserole inspired by the cuisine of Normandy.

Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup cream
  • 2 sprigs thyme
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and brown them on both sides.
  2. Remove the chicken and set aside. In the same skillet, add the onion, carrots, and garlic, and sauté until softened.
  3. Add the mushrooms and sauté for another 5 minutes.
  4. Return the chicken to the skillet, add the chicken broth and cream, and bring to a simmer.
  5. Add thyme, salt, and pepper. Cover and cook for 30 minutes.
  6. Serve hot.
