- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup chicken broth
- 1 cup cream
- 2 sprigs thyme
- Salt and pepper to taste
- In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and brown them on both sides.
- Remove the chicken and set aside. In the same skillet, add the onion, carrots, and garlic, and sauté until softened.
- Add the mushrooms and sauté for another 5 minutes.
- Return the chicken to the skillet, add the chicken broth and cream, and bring to a simmer.
- Add thyme, salt, and pepper. Cover and cook for 30 minutes.
- Serve hot.
