1 cup pumpkin puree
1 cup Greek yogurt
2 large eggs
1/2 cup honey or maple syrup
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
In a large bowl, mix together the pumpkin puree, Greek yogurt, eggs, honey or maple syrup, and vanilla extract.
In another bowl, combine all the dry ingredients: whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool for a few minutes before transferring to a wire rack.
Notes
These muffins can be stored in an airtight container for up to a week.
