- 4 slices whole wheat bread
- 4 eggs
- 8 slices turkey bacon
- 1 cup spinach
- 1/2 cup sliced tomatoes
- 1/4 cup cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- Cook turkey bacon in a skillet until crispy, then set aside.
- In the same skillet, sauté spinach until wilted, then remove from heat.
- In a bowl, whisk eggs, season with salt and pepper, and pour into the skillet. Cook until just set.
