Delicious and nutritious, these Healthy Blender Cottage Cheese Muffins are easy to make and perfect for a guilt-free snack or breakfast.

Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine all the ingredients in a blender and blend until smooth.
  3. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  4. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  5. Allow to cool before removing from the tin.

Notes

  • These muffins freeze well, so make a double batch!
  • Add in fruit or nuts for extra flavor and texture.
