A lighter version of the classic chicken parmesan, perfect for health-conscious diners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow bowl, mix the breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  3. Coat each chicken breast in olive oil, then dredge in the breadcrumb mixture.
  4. Place the coated chicken in a baking dish and bake for 20 minutes.
  5. Remove from the oven and top each piece with marinara sauce and mozzarella cheese.
  6. Return to the oven and bake for an additional 10 minutes or until the cheese is bubbly.
  7. Let it rest for a few minutes before serving.
