These Hash Brown Egg Cups with Turkey Bacon are an easy and delicious breakfast option that the whole family will love.

  • 2 cups shredded hash browns
  • 6 large eggs
  • 1 cup cooked turkey bacon, chopped
  • 1/2 cup shredded cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the shredded hash browns, salt, and pepper. Press the mixture into the bottom and sides of a greased muffin tin.
  3. Bake the hash brown crusts for about 20 minutes or until golden brown.
  4. In another bowl, whisk the eggs and stir in the chopped turkey bacon and cheese.
  5. Pour the egg mixture into the hash brown cups and return to the oven.
  6. Bake for an additional 15-20 minutes or until the eggs are set.
  7. Allow to cool slightly before removing from the muffin tin and serve warm.
