Ingredients

  • 1 pound chicken breast, cut into cubes
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon ginger, grated
  • 1 tablespoon lime juice
  • 1 teaspoon red curry paste
  • 12 skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, mix coconut milk, soy sauce, brown sugar, garlic, ginger, lime juice, and red curry paste.
  2. Add chicken cubes to the marinade, cover, and refrigerate for at least 1 hour.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken onto the soaked skewers.
  5. Grill skewers for 5-7 minutes on each side or until cooked through.
