  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • 1 cup parsley, chopped
  • 1/4 cup cilantro, chopped
  • 2 cloves garlic, minced
  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine chicken cubes, olive oil, salt, black pepper, garlic powder, and red pepper flakes. Mix well.
  3. Thread chicken onto skewers.
  4. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
  5. Meanwhile, in a separate bowl, mix parsley, cilantro, minced garlic, olive oil, red wine vinegar, salt, and black pepper to make the chimichurri sauce.
  6. Serve chicken skewers with chimichurri sauce drizzled on top.
