  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup tzatziki sauce

Instructions

  1. In a bowl, combine olive oil, garlic powder, paprika, oregano, salt, and black pepper. Add diced chicken and toss to coat.
  2. Heat a skillet over medium heat and cook the chicken until golden and cooked through, about 5-7 minutes.
  3. In serving bowls, layer the rice, cooked chicken, cherry tomatoes, cucumber, feta cheese, olives, red onion, and parsley.
  4. Drizzle with tzatziki sauce before serving.
