Delicious Gouda and mushroom stuffed chicken that is perfect for a weeknight dinner.

  • 2 chicken breasts
  • 1 cup shredded Gouda cheese
  • 1 cup mushrooms, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped mushrooms until soft.
  3. In a bowl, combine the sautéed mushrooms, shredded Gouda cheese, garlic powder, salt, and pepper.
  4. Cut a pocket into each chicken breast and stuff it with the Gouda and mushroom mixture.
  5. Cover the chicken with breadcrumbs and place in a baking dish.
  6. Bake for 25-30 minutes or until the chicken is cooked through.
