  • 1 whole turkey
  • 1/2 cup unsalted butter, softened
  • 2 onions, quartered
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 5 cloves of garlic, minced
  • 2 tablespoons of fresh thyme, chopped
  • 2 tablespoons of fresh rosemary, chopped
  • 2 tablespoons of fresh sage, chopped
  • 1 lemon, halved
  • 1 tablespoon of salt
  • 1 teaspoon of black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the turkey by patting it dry with paper towels.
  3. Rub the softened butter under the skin and all over the turkey.
  4. Season it generously with salt and pepper.
  5. Stuff the cavity with lemon halves, onion, garlic, and herbs.
  6. Place the turkey in a roasting pan and surround it with carrots, celery, and additional onions.
  7. Roast in the preheated oven for about 13 minutes per pound or until the internal temperature reaches 165°F (75°C).
  8. Let it rest for at least 30 minutes before carving.

Notes

  • For extra flavor, brine the turkey the day before.
  • Save the bones for making a delicious turkey stock.
