- 1 whole turkey
- 1/2 cup unsalted butter, softened
- 2 onions, quartered
- 4 carrots, chopped
- 4 celery stalks, chopped
- 5 cloves of garlic, minced
- 2 tablespoons of fresh thyme, chopped
- 2 tablespoons of fresh rosemary, chopped
- 2 tablespoons of fresh sage, chopped
- 1 lemon, halved
- 1 tablespoon of salt
- 1 teaspoon of black pepper
- Preheat your oven to 425°F (220°C).
- Prepare the turkey by patting it dry with paper towels.
- Rub the softened butter under the skin and all over the turkey.
- Season it generously with salt and pepper.
- Stuff the cavity with lemon halves, onion, garlic, and herbs.
- Place the turkey in a roasting pan and surround it with carrots, celery, and additional onions.
- Roast in the preheated oven for about 13 minutes per pound or until the internal temperature reaches 165°F (75°C).
- Let it rest for at least 30 minutes before carving.
