Frito Cowboy Cabbage is a delicious combination of flavors and textures that makes for a satisfying meal.

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups chopped cabbage
  • 2 cups Fritos corn chips

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same skillet, add the ground turkey and cook until browned.
  3. Add the onion, bell pepper, and garlic, cooking until softened.
  4. Stir in the kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper. Allow to simmer for 10 minutes.
  5. Add the chopped cabbage and cook until wilted, about 5 minutes.
  6. Serve topped with crumbled turkey bacon and Fritos.

Notes

  • For an extra kick, add hot sauce to taste.
  • This dish can easily be doubled for larger gatherings.
