A delicious and comforting casserole packed with French onion flavors and tender chicken.

  • 2 cups cooked orzo
  • 1 pound chicken breast, cooked and shredded
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 can French onion soup
  • 1 cup shredded mozzarella cheese
  • 1 cup beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until caramelized.
  3. In a large bowl, combine cooked orzo, shredded chicken, sautéed onions, French onion soup, beef broth, garlic powder, and thyme.
  4. Transfer the mixture to a greased baking dish and top with shredded mozzarella cheese.
  5. Bake for 25-30 minutes, until cheese is melted and bubbly.

Notes

  • For extra flavor, top with fresh herbs before serving.
  • This dish can also be made with leftover rotisserie chicken.
