French Onion Chicken and Rice

A delightful dish combining the rich flavors of French onion soup with chicken and rice, perfect for a comforting meal.

  • 2 cups cooked rice
  • 4 pieces chicken thighs
  • 1 large onion, sliced
  • 2 cups beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté the sliced onions until caramelized.
  3. In a baking dish, layer the cooked rice.
  4. Place the browned chicken thighs on top of the rice.
  5. Pour the beef broth over the chicken and rice.
  6. Sprinkle garlic powder, thyme, salt, and pepper over the top.
  7. Cover with foil and bake for 35 minutes.
  8. Remove the foil, add shredded mozzarella cheese, and bake for an additional 10 minutes, or until chicken is fully cooked.
