  • 4 eggs
  • 2 slices turkey bacon, chopped
  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup heavy cream
  • 1/2 cup shredded cheese (such as cheddar or mozzarella)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy. Add the chopped spinach and cherry tomatoes, cooking until the spinach is wilted.
  3. In a ramekin, layer the cooked bacon and veggies. Crack an egg on top of each.
  4. Pour heavy cream over the eggs and sprinkle with cheese. Season with salt and pepper.
