An indulgent casserole that combines the flavors of classic Eggs Benedict with turkey bacon and chicken ham.

Ingredients

  • 8 eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 slices turkey bacon
  • 1 cup chicken ham, diced
  • 6 slices English muffins, torn
  • 1 cup cheddar cheese, shredded
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs, milk, salt, and pepper.
  3. Layer the torn English muffins in a greased baking dish.
  4. Cook turkey bacon in a skillet until crispy, then chop and sprinkle over the muffins.
  5. Add diced chicken ham and green onions on top.
  6. Pour the egg mixture over the layers in the baking dish.
  7. Top with shredded cheddar cheese.
  8. Bake for 30-35 minutes, or until set and golden.
  9. Let cool for 5 minutes before serving.

Notes

  • For a vegetarian option, you can omit the bacon and ham.
  • This casserole can be prepared the night before and chilled in the refrigerator overnight.
