This Easy Italian Pastina Soup is a comforting dish perfect for cold days.

Ingredients

  • 1 cup pastina pasta
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add onion, carrots, and celery. Sauté until softened, about 5 minutes.
  2. Stir in the garlic and dried oregano and cook for another minute until fragrant.
  3. Add the chicken broth and bring to a boil.
  4. Stir in the pastina and cook according to package instructions until al dente.
  5. Season with salt and pepper, then stir in the Parmesan cheese before serving.
