A delightful twist on the traditional tiramisu, this Easy Gingerbread Tiramisu combines the warm spices of gingerbread with the classic coffee and mascarpone flavors.

  • 2 cups gingerbread cookies
  • 1 cup brewed coffee, cooled
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cocoa powder for dusting

Instructions

  1. Begin by brewing the coffee and allowing it to cool.
  2. In a mixing bowl, whisk together the mascarpone cheese, powdered sugar, vanilla extract, and ground cinnamon until smooth.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  5. Dip the gingerbread cookies quickly into the cooled coffee, and layer them in a serving dish.
  6. Spread a layer of the mascarpone mixture over the cookies.
  7. Repeat the layers until all ingredients are used, finishing with the mascarpone mixture on top.
  8. Refrigerate for at least 4 hours or overnight.
  9. Before serving, dust the top with cocoa powder.

Notes

  • For an extra kick, you can add a splash of rum or bourbon to the coffee.
  • Make sure the coffee is cooled to avoid soggy cookies.
