  • 1 whole wheat tortilla

  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Whisk the eggs in a bowl and season with salt and pepper.
  3. Add the chopped spinach to the skillet and sauté for 2 minutes until wilted.
