A refreshing and healthy salad made with cucumbers and a delicious Asian dressing.

Ingredients

  • 2 large cucumbers
  • 1 tablespoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 2 tablespoons sesame seeds
  • 2 green onions, chopped

Instructions

  1. Slice cucumbers thinly and place in a bowl.
  2. Sprinkle salt over the cucumbers and let sit for 10 minutes to draw out moisture.
  3. In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and grated ginger.
  4. Drain excess liquid from cucumbers and rinse with cold water.
  5. Add the dressing to the cucumbers and toss to coat.
  6. Stir in sesame seeds and chopped green onions before serving.

Notes

  • For extra spice, add red pepper flakes.
  • Chill in the refrigerator for 30 minutes for best flavor.
