- 2 large cucumbers
- 1 tablespoon salt
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 2 tablespoons sesame seeds
- 2 green onions, chopped
- Slice cucumbers thinly and place in a bowl.
- Sprinkle salt over the cucumbers and let sit for 10 minutes to draw out moisture.
- In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and grated ginger.
- Drain excess liquid from cucumbers and rinse with cold water.
- Add the dressing to the cucumbers and toss to coat.
- Stir in sesame seeds and chopped green onions before serving.
Notes
- For extra spice, add red pepper flakes.
- Chill in the refrigerator for 30 minutes for best flavor.
