  • 8 ounces linguine
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the linguine according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add shrimp and cook until pink, about 2-3 minutes. Remove shrimp and set aside.
  4. In the same skillet, add cherry tomatoes and spinach, cooking until spinach is wilted.
  5. Pour in heavy cream, Parmesan cheese, and Italian seasoning; stir to combine.
  6. Add shrimp back to the skillet and toss with linguine until well coated.
  7. Season with salt and pepper to taste, then serve immediately.
