  • 1 cup corn kernels
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 2 tablespoons chopped cilantro
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine the cooked pasta, corn, red onion, and bell pepper.
  3. In a separate bowl, mix mayonnaise, sour cream, lime juice, cilantro, chili powder, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss until well combined.
  5. Cover and refrigerate for at least 30 minutes before serving.
