  • 2 cups roasted butternut squash, pureed
  • 8 ounces pasta of choice
  • 4 slices turkey bacon
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil

Instructions

  1. Cook the pasta according to package directions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  3. Add olive oil to the skillet and sauté spinach until wilted.
  4. In a large bowl, combine pureed butternut squash, heavy cream, garlic powder, salt, and pepper.
  5. Add the cooked pasta and mix well. Stir in chopped turkey bacon and spinach.
  6. Sprinkle with Parmesan cheese before serving.

Notes

  • For a vegan option, substitute turkey bacon with mushrooms and heavy cream with coconut cream.
