Ingredients

  • 2 heads garlic
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the tops off the heads of garlic and wrap them in aluminum foil.
  3. Roast for 30-35 minutes until soft and caramelized.
  4. After cooling, squeeze the garlic into a bowl and mash.
  5. In a saucepan, add the mashed garlic, heavy cream, Parmesan, lemon zest, and juice.
  6. Stir over medium heat until warmed through and combined.
  7. Season with salt and pepper to taste.
  8. Serve over your choice of pasta.
