8 ounces fettuccine pasta
2 tablespoons olive oil
1 pound salmon fillets
4 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Instructions
Cook the fettuccine according to package instructions.
In a skillet, heat olive oil over medium-high heat. Add the salmon and cook until golden brown on both sides, approximately 4-5 minutes per side. Remove and set aside.
In the same skillet, add butter and garlic, and sauté until fragrant.
Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
Flake the salmon into chunks and return it to the skillet. Add the cooked fettuccine and toss to combine.
Season with salt and pepper, and garnish with parsley before serving.
Notes
For a lighter option, you can use half-and-half instead of heavy cream.
