These Cranberry Crumble Bars are a delightful combination of tart cranberries and a buttery crumble topping. Perfect for any occasion!

Ingredients

  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the cranberries with half of the sugar and set aside.
  3. In another bowl, combine flour, oats, remaining sugar, baking powder, and salt.
  4. Add softened butter and vanilla extract to the flour mixture and stir until crumbly.
  5. Press half of the crumble mixture into the bottom of a greased baking dish.
  6. Spread the cranberry mixture on top of the crust.
  7. Cover with the remaining crumble mixture.
  8. Bake for 30-35 minutes until golden brown.
  9. Let cool before cutting into bars.

Notes

  • For extra flavor, consider adding a pinch of cinnamon to the crumble mix.
  • Serve with whipped cream or ice cream for a delicious dessert.
