- 2 cups fresh cranberries
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the cranberries with half of the sugar and set aside.
- In another bowl, combine flour, oats, remaining sugar, baking powder, and salt.
- Add softened butter and vanilla extract to the flour mixture and stir until crumbly.
- Press half of the crumble mixture into the bottom of a greased baking dish.
- Spread the cranberry mixture on top of the crust.
- Cover with the remaining crumble mixture.
- Bake for 30-35 minutes until golden brown.
- Let cool before cutting into bars.
