  • 4 medium sweet potatoes
  • 1 cup cranberries
  • 1 cup diced apples
  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup chopped pecans

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Bake sweet potatoes for 45 minutes or until tender.
  4. Remove sweet potatoes and allow to cool slightly.
  5. Cut sweet potatoes in half lengthwise and scoop out the flesh into a bowl.
  6. Mix the sweet potato flesh with cranberries, diced apples, brown sugar, butter, cinnamon, and nutmeg.
  7. Fill the sweet potato skins with the mixture, sprinkle with chopped pecans.
  8. Bake for an additional 20 minutes.
