- 4 medium sweet potatoes
- 1 cup fresh cranberries
- 1 cup diced apples
- 1/2 cup brown sugar
- 1/4 cup unsalted butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 cup chopped pecans
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes; bake for 45 minutes or until tender.
- In a saucepan, cook cranberries, apples, brown sugar, and spices until softened.
- Once sweet potatoes are cool, scoop out the insides and mix with the cranberry-apple mixture and butter.
- Stuff the mixture back into the sweet potato skins.
- Top with chopped pecans and return to the oven for 15 minutes.
