Indulge in Cranberry Apple Twice-Baked Sweet Potatoes This Fall!

  • 4 medium sweet potatoes
  • 1 cup fresh cranberries
  • 1 cup diced apples
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup chopped pecans

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes; bake for 45 minutes or until tender.
  3. In a saucepan, cook cranberries, apples, brown sugar, and spices until softened.
  4. Once sweet potatoes are cool, scoop out the insides and mix with the cranberry-apple mixture and butter.
  5. Stuff the mixture back into the sweet potato skins.
  6. Top with chopped pecans and return to the oven for 15 minutes.

Notes

  • Perfect as a side dish for Thanksgiving.
  • Try adding a marshmallow topping for extra sweetness.
