A delicious and easy-to-make casserole featuring cottage cheese and a variety of vegetables.

  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1 cup chopped zucchini
  • 1 diced onion
  • 2 cloves minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix together the cottage cheese, spinach, bell peppers, zucchini, onion, garlic, salt, pepper, and Italian seasoning.
  3. Transfer the mixture to a baking dish and spread evenly.
  4. Sprinkle the shredded cheese on top.
