A deliciously moist Coffee and Walnut loaf that pairs perfectly with a cup of tea or coffee.

Ingredients

  • 200 grams walnuts
  • 250 grams flour
  • 200 grams sugar
  • 150 grams butter
  • 4 eggs
  • 50 ml strong coffee
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Toast the walnuts and chop them roughly.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the strong coffee.
  6. In another bowl, combine the flour and baking powder.
  7. Gradually fold the dry ingredients into the wet mixture.
  8. Finally, fold in the chopped walnuts.
  9. Pour the batter into a loaf tin and smooth the top.
  10. Bake for about 60 minutes or until a skewer comes out clean.

Notes

  • Make sure to let the loaf cool completely before slicing.
  • This loaf can be served with a coffee glaze on top for extra sweetness.
