Coconut Chicken and Rice is a delicious and simple dish that combines tender chicken with creamy coconut and fluffy rice, perfect for any occasion.

  • 1 pound chicken thighs
  • 1 cup jasmine rice
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 tablespoon curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup peas

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken thighs and brown on both sides.
  2. Remove chicken and add rice to the skillet, stirring to coat in oil.
  3. Add coconut milk, chicken broth, curry powder, salt, and pepper. Stir well.
  4. Return chicken to the skillet, cover, and simmer for 30 minutes until rice is tender and chicken is cooked through.
  5. Stir in peas and cook for another 5 minutes.
