  • ½ cup brown sugar, packed
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, mix the dry ingredients together: flour, sugar, baking powder, salt, and ground cinnamon.
  3. In another bowl, whisk together the wet ingredients: eggs, milk, oil, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. In a small bowl, combine brown sugar and cinnamon for the filling.
  6. Fill muffin cups halfway with batter, sprinkle with the cinnamon sugar mixture, and then top with more batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
